Sweet treat Saturday pumpkin pie cookies

It’s that time of the year thanksgiving is here.
It’s time to break out all of the classics.
Like Turkey, stuffing,sweet potato pie, cranberry inspired dishes
and of course the pumpkin.
All month long I will be sharing a few twist on your
thanksgiving classics. Starting with the pumpkin pie.
I have created a cookie that packs all the tradition of
pumpkin pie but quick and easy to make on the go.



Pumpkin pie cookies
1 ¼ cup flour
1 tsp baking soda
2 tsp baking powder
¼ cup granulated sugar
½ cup dark brown sugar
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
¼ cup pumpkin pie filling
1 stick of butter (soft)

Pinch of salt

In a bowl add flour, baking powder, baking soda,
brown sugar, granulated sugar, nutmeg and cinnamon.
Give a quick
stir until all ingredients are mixed together.
In a medium mixing bowl add butter
and vanilla mix with hand
mixer on low until butter breaks up. Add apple pie filling ,
mix on low then slowly add in dry ingredients.
Once all ingredients
come  together form your cookie dough. Palm size balls work great
or use a teaspoon of dough. Preheat oven for 10 minutes at 350. Cook
for 10-13 minutes or
until cookies are brown and slightly puffed up.
