When celebrating Martin Luther King Jr. day I often draw inspiration from him. Let it be his speeches, his impact. Or even his food. After a bit of research I have learned Dr. King's favorite meal, and what was set to be his meal before he met his final fate. Which was macaroni and cheese, sweet potatoes, greens, crowder peas, and sweet potato pie. He was also known to have loved pecan pie, and indulge from time to time in screwdrivers.
Recreating this meal seemed simple enough, but also met its fair share of challenges.
One I found that Dr. Kings actual last meal was very close to this but a bit different. Which included Southern fried chicken with Louisiana hot sauce, black-eyed peas, collard greens and corn bread.
Two should I recreate the actual favorite meal, or the final meal. Three, I do not enjoy black eyed peas. Four Dr. Kings day falls right in the midst of my detox. So I have decisions to make. Which brings me to the plan I had moving forward. Being that I make most of these dishes on new years, why not combine them. The fried chicken is simple, it was already on my menu. Greens check, we use collard greens to usher in the financial good fortune for the new year.
Cornbread. Also simple. Where I would have to pivot , which is something I do best. Is the sweet potatoes and the peas. If I was to have a sweet potato pie I needed all the sweet potatoes I could get my hands on. So I substituted sweet potatoes for mashed potatoes. Then there is my aversion to black eyed peas. So I substituted them for butter beans. After all the adjustments and pivoting I did to accomplish this inspired meal, I feel I came up with a delicious meal. That Dr King would be proud of and delighted to eat.
