One of my favorite things about summer is the food. Funnel cake, ice cream, slushies. You name it , summer brings the fun treats. But something else that comes with summer are cook outs. Yes the good old bar b que. There is nothing like firing up the grill and grilling up some burgers, chicken, steak and even watermelon. One of my favorite things to grill up are some ribs and corn on the cob. Now I know not everyone has a grill on deck, but the love for grill food is not lost. All you need is a grill pan, an oven and these few recipes. To bring your cook out indoors. Now if you are a set it and forget it kind of person the ribs will be easy. All you have to do is rinse your rack, trim the fat to your liking (I don’t trim the fat if i’m putting it directly in the oven).
Season (on each side)
Or
Marinate over night
2 tbsp garlic powder
3 tbsp onion powder
1 tbsp salt
2 tbsp black pepper
2 tsp smoked paprika
2 packets of sazon
4 cloves of garlic diced or 2 tbsp minced garlic
1 cup of beef broth or water
Directions: place in large baking pan, in oven. At 250 for 5 to 6 hours. Or until tinder as you prefer.
Top with bar b que sauce, serve with grilled corn on the cob and roasted potatoes and enjoy.
If you want to cut down on the cook time parboil is the way to go. In a large pot fill half way with water or beef broth. If you use water be sure to season with salt. Boil for 10 to 15 minutes. Then cook in the oven at 350 for 2 to 3 hours.
